Baby it's cold inside

During the seventy-five minutes the technician needed to do the annual maintenance service on the furnace, the heat was mostly off. I keep it at only 67 to begin with, so it got rather nippy inside quickly. Have I mentioned it's only 29 degrees outside?

Yeah...as soon as he left, this happened.

Toffee Squares

1 cup all-purpose flour
1/2 teaspoon cinnamon
1/2 cup butter or margarine, softened
1/2 cup packed brown sugar
1 egg, separated (you need both parts)
1/2 teaspoon vanilla
1 cup semi-sweet chocolate chips
1/2 cup coarsely chopped walnuts or pecans

Preheat oven to 275.

Mix the flour and cinnamon in a small bowl until blended.

In a larger bowl, cream the butter with the sugar until light and fluffy.

Add the egg yolk and the vanilla to the sugar/butter mix and beat until combined. Add the flour/cinnamon mix and stir until just blended.

Grease a 9 x 9 pan or spray with nonstick spray. Press the dough into the pan in an even layer. Brush the top lightly with the egg white.

Bake 35 minutes or until lightly browned.

When it comes out of the oven, spread the chocolate chips over the top. Let sit five minutes, then spread into an even layer over the crust (this is easier if you start with the mini-chocolate chips-they melt faster). Sprinkle with the nuts. Chill until the chocolate is firm.

Cut into 24 squares.
