When baking the aforementioned Spicy Molasses Cookies, do not under any circumstances use the almost-new, non-stick cookie sheets purchased several years ago explicitly for cookie baking. Due to the extended length of time between cookie making episodes, you will have forgotten that the pans cause the bottom of the cookie to scorch before the center is cooked.
